Organic Tricolor Carrots

Pretty as pie, and won’t make your pants tight!


Just because you are great cook, doesn’t mean you have to suffer through tight pants your whole life!

I want to introduce you to a few of my favorite lighter options for the Thanksgiving table. These Roasted Organic Tricolor Carrots are just the splash of color you need to get your pulse racing…in a good way!

The plain old truth of the matter is that you can roast just about any vegetable in a light coating of olive oil and a sprinkle of salt. Remember your rule: Roast it With Renata at 375F!

Mostly, my penchant for roasting comes from my constant rushing from point a to point b.  If I want to go for a run, and there is 10 feet of snow outside, I pop some veggies in the oven, and head to the treadmill while they cook.

By the time you run a few miles, you will be hungry, and your body will want healthy food.

But these carrots are so glorious in color that there you can serve them every day, or on Thanksgiving Day! They make an stunning presentation on a stark white plate.

If you have parchment paper, use that for easy cleanup. But it’s not necessary.

Just toss your veggies in a little avocado or olive oil, sprinkle with salt, and spread them out on a baking sheet.

When you come in the kitchen from your run, whether it’s on Thanksgiving or any other day of the week, your body will thank you for the water, fiber and flavor in those coats of many colors.
