Renata’s Super Strong Split Pea Stew

Colorful combo of green split peas, orange butternut squash, and creamy white russet potatoes.
  • 2 cups dried split peas
  • 2 cups cubed butternut squash
  • 2 cups peeled and chopped russet potato
  • 4-6 chopped mushrooms
  • 2 chopped shallots
  • 8 cups water
  • 5 cloves sliced garlic
  • 1-2 tsp olive oil
  • 1/4 c dry white wine
  • 10 twists of Trader Joe’s Everyday Seasoning, or 2 T of dried thyme, parsley, or mix of poultry blend.
  • salt and pepper to taste
  • Saute garlic, shallots, mushrooms and seasonings in olive oil for a few minutes. Add white wine and cook for a minute. Add all other ingredients and cook on medium simmer for about an hour until all veggies tender.
