Oh Momma. Mashed Potatoes.
Note: Got a vegan? Substitute hot milk with hot organic soy or almond milk, use vegan ‘butter’ or margarine as you whip instead of real butter.
- best organic russet or yukon gold potatoes
- Organic Valley unsalted butter
- a mug of hot Organic Valley milk (I microwave it & use 2%)
Peel potatoes, quarter, and either boil (in salted water) or steam until soft.
Put cooked potatoes in mixer, blend on low-medium, adding a mug full of microwaved organic hot milk a little at a time.
Add a few tablespoons of butter, or however much you love, and crank the speed up to medium high for a minute util you get whipped creaminess you crave.
Taste and add salt if needed. If needs a bit more hot milk, add and mix again until lovely, whipped, light, creamy and ready for a friend and a fork.
