Renata’s Gluten-Free Oven Baked Pasta 

1 pan ♦ 30 minutes ♦ 4 ingredients!

This is the best version of my oven-baked pasta, and tastes great for gluten-free guests.

What a luscious, super easy, fast party dish!

I made this oven-baked pasta for friends who prefer a gluten-free diet.  I LOVE the Lundberg brand of organic, gluten-free rotini. I prefer gluten-free pasta made from brown rice instead of corn, oats, quinoa.  This pasta keeps its firm bite.

I made Lundberg organic brown rice pasta and my husband did not even realize it was gluten-free! For me, that is the ultimate success!

The great thing about this dish is that you can mix in whatever other proteins or veggies that you need at the very end. 

A bag of frozen organic peas can be mixed in and baked for just a moment to cook all through.

If you want to add diced chicken, simply wrap your chicken breasts in a parcel of foil and put on a cooking sheet in the same oven as the baked pasta.  When chicken breast is cooked through (about half an hour or 165F internal temp), then just dice the pieces up and mix them through the pasta.

Peas, mixed frozen veggies, cooked cubed chicken, Parmesan cheese, or vegan cheese all great mix-ins! Try all your favorite combos.

  • 1 lb bag of brown rice rotini, fusilli or rigatoni
  • 2 (28oz) cans whole peeled Italian tomatoes
  • 1/2 C. extra virgin olive oil
  • 1 tsp sea salt


Step 1

Preheat oven to 350F

Step 2

Pour uncooked, raw, dry pasta into 9x13 dish (clink!)

Step 3

Add oil, salt and stir to evenly combine. Kids love this part!

Step 4

In a blender, add one can of tomatoes, then rinse 1/5 of the can with water to get all luscious juices, and add that too. Blend for 3 seconds.

Step 5

Pour contents of blender into pasta/oil mixture and stir evenly to combine.

Step 6

Repeat the process with the second can of tomatoes.

Step 7

When the two cans of tomatoes, dried pasta, oil, salt mixture all evenly combined, pop it into the preheated oven.

Step 8

Bake 15 minutes uncovered.

Step 9

Take pan out of oven, mixing gently to get bottom pasta up to top. All the pieces need a chance to be drenched in liquid love.

Step 10

Pop pan back in oven uncovered and bake 15 minutes longer.

Step 11

Pasta is done when it is thick, pasta is fork-tender or soft as you like it. 30-40 minutes.

Step 12

Mix with parmesan cheese if you like, or suitable vegan alternatives.

Step 13

Additional mix-ins at end: cubed chicken, peas, mixed vegetables, ground beef, beans, fresh garden herbs.
