- 1 brown rice tortilla (Food for Life brand)
- 1 tablespoon of organic strained tomatoes (Bionatural brand)
- 1 tablespoon dairy-free grated mozzarella cheese (Daiya brand)
- 6 organic spinach leaves
- 6-8 slices organic, nitrate-free salami (Applegate Farms brand)
Spread strained tomatoes on tortilla.
Nestle salami and spinach leaves on top.
Sprinkle with cheese.
Pop in toaster oven or broiler for a few minutes, or until golden.
