1-Pot Colorful Curried Kale Stew

This dish sweetens the pot for those who are kale frail, which is good because this leafy green veg wants to make you powerfully pumped! It’s loaded with iron, vitamin C, and has tons of fiber with only 33 calories per cooked cup. How many foods will load you with this much iron and so few calories?


  • 1 bunch kale, chopped
  • 1 sweet potato, peeled & chopped
  • 1 white potato, peeled & chopped
  • 1 large portobello mushroom, chopped
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • 2 T curry powder
  • 1 jalepeno pepper, pierced but left whole
  • 3 cups water
  • 1 tsp salt
  • 1-2 tsp olive oil (optional)
  • chopped cilantro (optional)


Step 1

Pile all ingredients into large pot & cover

Step 2

Cook on medium high for 15-20 minutes until potatoes soft

Step 3

Stir/break up all lightly with spoon & serve

Step 4

Serve with freshly chopped cilantro (optional)
