a hand full of multi-colored organic carrots

olive oil (or vegetable oil like avocado oil)

sea salt


  1. Cut your carrots of many colors lengthwise once, then again.

  2. Lay your oranges, golds, reds and purples on a baking sheet lined with parchment paper for easy cleanup. Give them a little space to breathe in between.

  3. Rub-a-dub your colorful babies evenly with olive oil, avocado oil, or a mixture of both! (Olive for taste, high-smoke-burn oil for browning)

  4. Sprinkle your favorite sea salt all over beautiful carrot spears.

  5. Roast-it-with-Renata at 375F until they are soft inside, a little golden brown if ya like it.  Naturally, I like mine a little burned!

  6. 15-20 minutes until soft.

  7. 20-35 minutes for golden or slightly over browned carrots.

  8. Slurp those colors into your cells!

“What is this?” my husband texted me a picture of the deep purple carrot that was in his lunch.  Yes, I pack my husband his lunch some days for work. I can’t resist the cost savings!

(Yes, we are codependent.)

I LOVE the jewel toned colors of the bunches of carrots in many colors. Joseph’s coat and my plate have a lot in common and that’s the way I like it!

My theory on vegetables and fruits is that all those different colors each have a job to do in the body. I like to think that every color is doing something different to make my body function at its finest!

If this theory is bunk, then I still get a kick out of holding, cutting and tasting every gorgeous hue that nature’s glorious ecosystem offers.

My plate of many colors works for me!
