Some small, local farms cannot afford to get organic certification, but they may not use pesticides or GMO seeds/feed.

Oh Momma. I may have to swing by the Elmhurst Farmers Market today from 7am-1pm to get a few bags of Jake’s Country Meats ground sausage for the freezer! This recipe NEVER fails to dazzle folks.
I use Jake’s Country Meats sausage because I have seen the care that goes into the family farm.
Good farming is great for your conscience, yes. Who wants to think of animals tightly packed into dreadful conditions, being fed the cheapest ingredients, and being shipped back and forth across the miles for slaughter, processing and packaging.
Jake’s Country Meats, and indeed any of your local farmers markets usually have free-range pork, from animals who have free access to rolling hills and outstanding diets.
Animals are like us. When they eat well and exercise, they grow strong, healthy bones and bodies. This is kinda gross to think of, but strong bones flavor delicious meat! It’s true!
So while you are doing something good for the environment, the culture and the local economy, you are getting really delicious meat too!
Please visit your local farmers market, wherever you live. It may not be the cheapest, but Momma was right…you get what you pay for.

You always need that spark of imagination. Sometimes I’m midway through a book before it happens. However, I don’t wait for the muse to descend, I sit down every day and I work when I’m not delivering lambs on the farm.
