Renata’s Sendoff Menu for Da Bike Boys

If you are in the kitchen, you are part of the family.

So proud of Da Boys!

Renata’s Oven-Baked Pasta–because it’s done in 50 minutes flat, and uses ONE pan.

Chicken-in-a-Bag–same reason!

Veggie Toss–because I needed a stove top recipe while ovens were in use.

Veggie Toss–New Recipe:

Toss chopped:  broccoli, portobello mushrooms, garlic, spring onion, parsley into a pan coated with olive oil & cook 5 minutes uncovered.  Pour a half cup water in pan, stir & cook covered 5 minutes or until veggies tender. Salt & pepper to taste.

Jacob White and Jack Funk returned to Renata’s Kitchen after Team Arapahoe’s Elmhurst victory, and proved Da Bike Boys can also grate mountains of Parmesan cheese in two minutes flat!

There are so many people milling through our kitchen that it helps me to give monikers to guests and passersby.

Funk & White are now “Da Bike Boys”.

They grated their White cheese with such Funk!

Da Bike Boys were wonderful guests in Renata’s Kitchen.  They were great conversationalists, easygoing, and helpful with the dishes.

For their sendoff dinner, I made my old standby menu.

Veggie Toss Recipe:

Go nuts with the chopped herbs in season! I threw in every herb I grew, and chopped them finely, reserving some for garnish.

Renata’s Mixed Green Salad Recipe:

Fresh Herb Salad smells as good as it tastes.  Lemon, Olive oil, any herbs, lettuce, salt.  Done.

Coat salad leaves lightly in olive oil, salt and pepper.  Squeeze with fresh lemon halves until it tastes wonderful!

Add any of the following:  chopped spring onions, tomatoes, cucumbers,  Fresh Italian Flat Leaf Parlsey, Fresh Basil.

My husband Peter and I had a wonderful time chatting with Da Bike Boys about their championship races!

Whether they are grating cheese or pushing pedals, Funk & White sure can spin.
