Christmas Cookies for Vegans

Poor little vegans with no cherished family Christmas cookie recipes! I mean, how many pre-war, poverty-stricken immigrants came to America with recipes that didn’t make use of butter, lard, milk, cream, flour and sugar?
This chocolate chip cookie recipe is one to start generations of vegan children, grand children, and great grand children!
It tastes SO good that no one will miss the butter, I promise.
The holidays are a wonderful time to preserve traditions from the past. But I also love to add new traditions every year, just for fun. I want my kids to know that after I am gone, they can add whatever they wish to their repertoire, whatever their lifestyle, religious, or dietary choices.
The next recipe I will post for vegans will be the roll-out sugar cookie one. Those are so fun to decorate, and there is hardly any difference between the real recipe and vegan, except using vegetable fat, and an egg substitute like ground flaxseed and water.
Until then, enjoy one of the best COOKIE recipes I have ever tried.
The key is to get GOOD chocolate such as Ghirardelli.
Without tradition, art is a flock of sheep without a shepherd. Without innovation, it is a corpse.
